Hey there!
It’s been a while….why? Well because it’s summer and I’m busy busy keeping my kids entertained, lol.
However let me sneak in a little recipe that has and always will be on repeat during those summer months. It’s the perfect thing to bring to those potluck BBQ’s during these hot summer days.
This recipe is one that I got from The Neely’s but I’ve adapted it a bit.

Honey cornbread
2 cup yellow cornmeal
2 cups Kamut flour (or all-purpose flour)
2 tablespoon baking powder
1 cup granulated sugar
2 teaspoon french grey salt (or kosher salt)
1 cup milk
4 large eggs
1 stick butter, melted
1/2 cup honey
1. Preheat oven to 375 degrees F.
2. Into a large bowl, mix the cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together the whole milk, eggs, butter, and honey. Add the wet to the dry ingredients and stir until just mixed. Don’t overmix!
3. Grease 9×13 dish . Bake for 40 minutes, OR until golden and a toothpick inserted in the middle comes out clean.
If it gets too dark before it’s cooked in the middle, place aluminum foil lightly on top.
Let cool and enjoy with butter!
