Soft Gingersnap Cookies

Need a quick little Christmas cookie? These delectable little morsels are something I’ve made for years. They are quick, only require a few ingredients and your little ones can help roll the dough into balls as well roll said dough in sugar.

They are a season favorite here at Sagehill Cottage!

Soft Gingersnap Cookies

Ingredients:

1/2 cup softened butter

1/4 cup vegetable oil

1 egg

1 cup sugar

1/4 cup Molasses

2 cups + 2 Tbs flour

2 tsp baking soda

1 tsp ground ginger

1 tsp cinnamon

1/2 tsp salt

Directions:

Preheat oven to 350°

Combine butter and oil in mixer bowl and beat until smooth.

Beat in the egg sugar and molasses.

Sift the flour baking soda, ginger, cinnamon and salt together in a separate bowl.

Add the egg mixture to form a dough.

Roll the cookie dough by hand into 1 inch balls and coat with additional of sugar.

Place on a ungreased cookie sheets and bake at 350° for 8 to 9 minutes or until puffed.

Remove to wire rack to cool completely.

Makes 4 dosen small cookies.
